Chef Dimitris Chaidemenos, who leads the kitchen, is one of the figures associated with the development of creative Cypriot cuisine. He settled in Cyprus almost twenty years ago and saw potential in local cuisine beyond the traditional taverna format. His aim was to build a restaurant presenting the island’s culinary history through modern techniques, an approach reflected in the current menu.

The kitchen sources ingredients through partnerships with local producers. Since opening, the restaurant has worked with small-scale farmers, livestock breeders and farms across Cyprus. Cheeses, meats and vegetables form the basis of the menu. One example is the restaurant’s revival of traditional Tillyria halloumi, part of an effort to preserve local culinary traditions.

The menu reworks traditional recipes into new dishes. Halloumi and mint gyoza dumplings, served with pea guacamole and grape must teriyaki, are among the more popular items. Also popular are the Lefkara-style tava dumplings with lamb, potato cream and tomato sauce, which has become one of the restaurant’s signature dishes. Other dishes on the menu include koupepia with tuna sashimi, grouper tartare “giouvarlakia,” wedding pilaf served as risotto, vegan afelia with chestnuts, and anari cream mille-feuille.

Chaidemenos describes his cooking as built on three elements: quality, creativity and technique, with dishes drawing on Cypriot tradition presented through modern methods. Since opening, Dionysus Mansion has become known as one of the restaurants associated with the development of contemporary Cypriot cuisine.
